Look back far enough into most old world wine regions and you'll find monks, but Abbazia di Novacello in northern Italy's Alto Adige region is interesting in that even today its operations are handled by the Augustinian Order of Canons Regular. The Valle Iscaro Pinot Grigio has a nice minerality and white blossom finish. This wine would pair well with r white fish dishes and soft cheeses.
